Chef Tomas Belardi, known as Tomy, is an iconic figure in Japanese gastronomy in Israel with 20 years of experience. His culinary journey began in Barcelona, where he had the honor of working in an Asian restaurant awarded three Michelin stars. This experience inspired him to deepen his knowledge, leading him to Japan, the birthplace of the kitchen he so admires.
In Japan, Chef Tomy trained under master chefs, perfecting his craft with rigor and passion. This immersion allowed him to acquire unique techniques that he now applies to each of his creations. His approach stays true to Japanese tradition: each dish is meticulously seasoned with two to three specific sauces designed to enhance the flavors and achieve perfect harmony, without needing any additional seasoning.
Back in Israel, Chef Tomy used his expertise in prestigious restaurants, notably creating menus for Selas in Tel Aviv and Soho in Eilat. His constant quest for the perfect taste and his dedication to innovation make him a respected chef, always searching for new ways to delight the palate.
Chef Daniel, with 15 years of experience in the culinary world, is an expert in Japanese cuisine. His career, marked by stints in several restaurants, allowed him to perfect his craft and develop a deep passion for Japanese gastronomy, particularly for sushi.
In 2015, Daniel transformed his career by launching the innovative concept of a home chef specializing in Asian cuisine. This career shift attracted attention due to the exceptional quality of his services. His ability to create unforgettable culinary experiences directly at his clients’ homes has made him a leading reference in the field. He has specialized in organizing sophisticated meals for various events. His expertise and attention to detail guarantee unique and custom gastronomic moments. It is this passion for Japanese cuisine that led him to create Dashi, a project he worked on for years.
In 2023, as the Dashi project was already well advanced, a meeting was set to change Daniel’s adventure. That year, he met Tomas Belardi, one of the most renowned sushi chefs in Israel. Their paths crossed, as their shared passion for Japanese culinary art immediately sparked a connection.
Chef Tomy, with his background in several prestigious restaurants and his passion for excellence, brought exactly what the Dashi project needed: high-level expertise and boundless creativity. Tomas’s arrival in the team was a catalyst that propelled the project to its completion.
